It’s that time of the week again, Menu Planning Monday!
This is what I have got planned for dinners this week…
This week is all about ease plus cooking extras for the freezer to create some quick and easy dinners for later in the month. I don’t fancy spending ages in the kitchen when it is so warm at the moment. Plus we’re trying to save as much money as possible on our food shopping.
- Sunday- BBQ pork with potato wedges, corn on the cob and salad
- Monday – Leftover BBQ pork with pasta, broccoli and salad
- Tuesday- Lentil bolognese with pasta and courgetti (this will be portioned up for the freezer)
- Wednesday- Sri Lankan vegetable curry with white fish and rice (the vegetable curry base will be portioned up for the freezer)
- Thursday- Tuna pasta bake
- Friday- Chicken curry with pilau rice, poppadoms and homemade onion bhajis (the curry will be portioned up for the freezer)
- Saturday- Leftover tuna pasta bake
Breakfasts are smoothies or baked oats. Lunches are salads, especially as it’s still so warm.
