It wouldn’t be Christmas without mince pies! Here is a super easy mince pie recipe.
Recipe: Mince pies, makes 12
Ingredients:
- Half a portion of pastry (or ready made)
- 1 jar of mincemeat
- Flour for dusting
- Icing sugar for sprinkling
- Butter for greasing the tin
Method:
Preheat the oven to 180 degrees. Grease the tin with the butter so that the mince pies don’t stick. Roll out the pastry on the floured surface to about the thickness of a 2p coin. (I find with this pastry it really puffs up but you may want to go a little thicker if it is a different recipe or ready-made pastry). Using a round cutter, cut out 12 circles and then use them to line the tin.
Put just under a teaspoon of mincemeat in each space, try and keep it really central with a gap around the edges. It will spread down as it cooks and I find that this stops it from going over the edges.
You can either cut out some smaller circles as lids for the pies or small stars from the remaining pastry. I did both as you can see above! If you make lids, make a small cut or pierce the lid with a fork so that the steam can escape. You can brush with egg or milk if you so wish, I didn’t and they turned out fine.
Bake for about 15-20 minutes depending on your oven. If you are using a fan oven, you will need less time and definitely keep an eye on them.
Take them out, let them cool slightly, sprinkle with icing sugar and serve warm. We love them warm with homemade ice-cream! Lush!
