Breakfast is probably my favourite meal of the day and I love trying out new things to have for breakfasts and one of my favourite recipes (I have lots of favourite recipes!) is to make a banana scramble, or banana eggs. It is really easy to make and keeps me full all morning until lunch. You can also double the recipe easily enough.
RECIPE: banana scramble
SERVES: 1
INGREDIENTS:
- 1 banana
- 2 eggs
- Blueberries, optional
METHOD:
Mash the banana in a saucepan, add the 2 eggs and beat the mix together. If you are adding any berries, you can add them in now or at the end. Cook the mix over a medium heat, stirring regularly, just like you would scrambled eggs. It will be done when the mix is more solid than runny. I like to serve mine with cinnamon and peanut butter. I’ve also changed up the berries for raspberries or strawberries before.
