This is one of my favourite breakfast recipes and so versatile as the ingredients can totally be mixed up. They can be made in bulk for the week or cooked as you go.
Recipe: carrot cake baked oats
serves: 1
ingredients:
- 1/2 a carrot, grated
- 1 banana
- 40g of oats
- 50ml of milk
- 1 tsp of mixed spice
method:
Mash the banana in a large bowl. Add the oats, grated carrot, milk and mixed spice. Mix well and then spoon into 4 silicone cake cases on a baking tray. Bake for 20-25 minutes. (If I am cooking a big batch then they can take a little longer than this) They will be cooked when the tops are brown and a knife/skewer comes out clean from the middle.
I like them served with yoghurt and fruit. You can also take them on the go. I also like to mix up the main ingredient, sometimes blueberries, sometimes mincemeat. They are like muffins! Yum!
